Is there a difference in how whole wheat and all-purpose flour bake??

Honestly I dont think so....I have seen substitutions in a recipe where its a one to one ratio so I am guessing its just the nutritional value and maybe a little bit of taste

yes, whole wheat usually takes a lot more liquid for some reason. My mother made whole wheat pie crust and just substituted WW and it came out very dry. You can find recipes on line for WW stuff.
