Re: If I have the following ingredients
Mix Flour with Salt & Pepper Dredge the chicken in Flour. Lightly Fry the chicken in butter
In a pan sautee onions & mushrooms. Add spinach to wilt.
Place chicken on a baking sheet and layer procuitto, spinach/mushroom mixture and mozzerlla.
Bake until cheese melts.
If you want, after you fry the cutlets, deglaze the pan with a little white white and chicken stock to make a broth. Flavor with garlic and spices. Cook pasta according to directions and serve with sauce as a side dish. Sprinkle with Parm cheese.
ETA: Roast the asparagus in the oven with garlic, parm chesse and bread crumbs as a side dish.

Re: If I have the following ingredients
Pound the cutlets until they're thin. Layer prosciutto and cheese inside (I think you said you had sage too?) and roll up cutlets. Secure with tooth picks. Dip cutlets in egg, then bread crumbs. Brown both sides in a pan with olive oil. Put pan (if oven proof) in 350 oven for 30 - 40 min.

I was thinking the same thing but add the spinach too.
Then with the mushrooms make a brown-gravey wine or marsalla sauce.
YUMMY!!!

So I basically made this recipie, but i didn't bread them, just browned them and put them in the oven. They were good, but I think i over cooked them a little bit. I didn't make gravy, but I definitely will the next timeIi make this....it was good!
