Potato Soup Recipe?

Does anyone have a good recipe for a potato soup? I just had the loaded baked potato soup at Hale and Hearty and it was sooooo good! I am sure it was not healthy - it was like soupy mashed potatos with broccoli, cheese, bacon and sour cream in it, but I would love to try to make something similar and possibly healthier!! TIA

I got this recipe from lcherian and it's sooo good!

1/2 stick butter (I only use a tbsp and a lil EVOO instead)
1/4 cup chopped onions
1/4 cup chopped celery
1/4 cup flour
2 med. baked potatoes (one diced w/ skin on and one mashed)
1 can chicken broth
1 can evaporated milk
salt
pepper
serve with scallions, sour cream, and cheese if you like.

sautee the onions and celery in butter and evoo
add 1/4 cup flour
add broth and evap. milk till it boils
add potaoes and warm through
add salt and pepper to your own taste

(Its pretty thick so I add a 2nd can of broth , I prefer to use veg. broth instead of chicken for the 2nd can)
