I made it several years ago for Easter. If you go to a butcher, they will prep it for you and tell you how to cook it. So easy!

Yes - go to the butcher - or actually King Kullen has them on sale this week. They season it for you and get it all ready and then they will give you instructions on how to cook it. I did this last year and it came out great!

My mom has a recipe that I love and DH thought I was crazy. You cover the whole thing with Gulden's mustard and some parsley and whatever else spices you want on it, then cook as directed. So yum.

I am cooking for easter too. I am using garlic cloves pushed into the meat, sliced onions in pan, and pouring apple cider vinegar over the meat and salt/pepper. Lamb makes really good gravy too.

minced garlic...juice of one lemon-olive oil, minced rosemary and basil and locatelli cheese..put all in food processor and stab slits all over lamb and stuff. Squeeze additional lemon over lamb and marinate 24-48 hours. Cook on 450 for 15 mins-reduce and cook 350 for 13 mins per pound for med rare. Let sit 1.2 hoour before carving.

My recipe is similar to Lastchance !!
It comes from my Grandmas OLDEST friend who is Greek.........and Greeks know their lamb!!
I marinate for 2 days in: For a big piece of meat:
Fresh squeezed lemon juice (maybe 10 lemons) 3/4 cup olive oil fresh rosemary & thyme ( I leave them on the stems because it's easier) salt & pepper
SO EASY!! And yummy! The lemon tenderizes the meat!
