Leftover white rice

Any ideas on how to jazz it up? I was gonna do Chinese style stir-fry, but I have no sesame oil, and don't feel like going to the store.

FRIED RICE

2 tablespoons peanut, sesame or other oil
2 cloves garlic, minced
1 teaspoon fresh ginger, minced (optional)
1/2 cup diced onion or 4 green onions, thinly sliced
1/3 cup diced carrot, cooked
1/4 cup frozen peas, thawed
4 cups cooked white or brown rice, cooled completely
1 cup chopped, cooked shrimp, pork or beef
2 eggs, lightly beaten
3 tablespoons soy sauce
Salt and freshly ground black pepper, to taste


Instructions
STEP 1: Heat the oil in a wok or large skillet over high heat. STEP 2: Add the garlic, ginger and onion and cook, stirring constantly, for 1 minute. STEP 3: Reduce the heat to medium, and add the carrot, peas, rice and meat and cook, stirring, for about 5 minutes. STEP 4: Use your stirring spoon to make a well in the center of the rice and pour the eggs into it. Let the eggs cook for 1 minute, then slowly start to stir and incorporate the egg into the rice. STEP 5: Add the soy sauce and cook for 2 minutes longer, stirring and tossing with the spoon. STEP 6: Season to taste with salt and pepper. STEP 7: Serve immediately.



Tips & Warnings
The amount of oil you use is up to you. You need only a tablespoon or so to keep the rice from sticking.
You can put anything you want in fried rice: leftover vegetables, stir-fry or anything that seems interesting. Try fried rice with ham and eggs for breakfast.
Traditionally, fried rice is seasoned with salt instead of soy sauce, because soy sauce turns the rice brown. Whichever you choose, be conservative when you first add it. You can always add more, but you can't take too much back.
Try a few drops of sesame oil in the egg before you cook it.
For a spicy fried rice, add crushed red pepper flakes to the wok with the garlic.
For an added touch of flavor, serve the fried rice with hoisin or oyster sauce on the side.
Don't use hot rice, or you'll have a gloppy mess. Cooling the rice makes the grains separate.

hese are not really recipes, but quick ideas for already cooked rice


Heat and eat with milk and sugar, cinnamon and nutmeg.
Top rice with leftover gravy of almost any kind.
Mix shredded cheese into it and heat in the oven.
Make a simple rice pudding by adding 3 to 4 times as much milk as rice, sweetening it with sugar or honey, and adding a touch of lemon. Cook or bake slowly, stirring once or twice.
Pour chicken or beef bouillon over it and heat to eat as a side dish.
Mix salsa or picante sauce into leftover rice, add a little salt and call it "Spanish rice".
Put it in a pot with leftover chicken or turkey, add a can of mixed vegetables and some seasonings for a quick soup.
Make fried rice by heating in a little oil and adding a scrambled egg, tiny bits of leftover sausage and vegetables and soy sauce.
Use rice as the base for a raw vegetable salad. Use any combination of tomatoes, carrots, onions, green peppers, cucumbers, and shallots with a little salt and olive oil.
Reader Pat sent this idea: I like rice, cooked then layered with saurkraut, cooked bacon ( cut up into small pieces), a little bacon grease, and repeat. I then heat it in the microwave or oven.
Harlean says, "Mix cooked rice with blackeye peas or red beans. Add some bacon or smoked sausage and a little Cajun Spice. Warm dinner rolls on the side."
Ann sends the next three:

Variation on rice and beans: salsa, canned tomatoes, rice, and black beans, with a little cheese and a couple sliced jalapenos on top.
My husband loves stirfry - he has his own special concoction - and it is always put over rice. That said, I make stirfry all the time without any special recipe, very easy to chop up virtually any leftover veggie (chicken, too) I can lay my hands on and throw it in with some bouillion or curry.
When we have leftover rice, I like to just pour a little sesame seed oil over it - yummy dinner.
Reader Sheetal adds this idea: You can splutter a few mustard seeds in oil along with chopped onion and tomatoes and coriander leaves and juice of half a lime and add to leftover rice.
Craig had this idea: Mix together rice, chopped celery, cleaned bean sprouts and teriyaki sauce to taste. Spoon on to low center of an egg roll wrap and roll diagonally, folding in sides as you roll. Use egg white to seal. Deep fry in vegetable oil five to seven minutes or until wrap is crisp and golden brown.

Easy-to-mix batter puffs up into tender golden cakes high in protein, fiber, and nourishment. You can cook a batch in practically no time, and give your kids a satisfying, healthy start to their day.
A great way to use leftover rice!

INGREDIENTS

3 cups leftover cooked brown rice (or leftover Chinese fried rice)
2 eggs
butter or oil for frying
Salt to taste

1. Whip leftover rice and eggs together until well mixed.

2. Heat a heavy iron skillet over medium-high heat. Add butter and allow to melt, tilting pan to coat.

3. Drop batter into skillet by large spoonsful and allow to brown, then flip and brown on other side.

4. Add salt to taste and serve.



Helpful Hints:
You can vary this basic recipe in countless ways. For a fruity sweetness, try adding diced strawberries or whole blueberries to the batter. If you prefer a savory version, add chopped scallions or finely-chopped leftover cooked or grilled vegetables. Grated cheese or chopped nuts are also tasty additions.
