I used to write something like

Dear name

I just wanted to thank you again for meeting with me earlier today. I came away from our discussion very excited about working for XYZ company.

As we discussed, I think I'd be a great fit for the job title position because of add a reason or two here.

Once again, thank you for taking time out of your busy schedule to meet with me. If you have any further questions, please feel free to contact me at phone number or email.
