I have an AWESOME recipe for tex-mex turkey meatloaf. And yes, it's that good Chat Icon

I just don't have it on me - I can post it later (if I remember!)

It has oats in it, salsa, corn, eggs, chili powder, and a few other things. It's very easy.

Ok, here's the Tex-Mex meatloaf recipe:

1 lb ground turkey
1 cup uncooked oats (not the instant kind)
3/4 cup salsa (*buy a big jar though - see below)
1/2 cup corn
1/2 cup chopped onion
1 egg, slightly beaten
handful of chopped cilantro
1 tsp chili powder

Combine ingredients and shape into loaf. Put in loaf pan and bake at 350 for around 1 hour, or until internal temperature is 170 degrees.

*Top the meatloaf with extra salsa and serve.
