Just wanted to share some pics of my handiwork this 4th of July
I bought these ice cream sandwich molds from William Sonoma, and made them for my parents' 4th of July BBQ. Just wanted to post pics of how they came out. They were so easy, I highly recommend the molds if you have parties with kids. So fun to make and eat!!

Easy, but time consuming. I made the cookies from the recipe that came with the set. The dough had to chill for 2 hours and then after baking the sheet of cookie dough, it had to cool for 1 hour. But the actual assembly was easy. We just had to stop halfway through to refreeze the ice cream since it was melting. Plus, we had to put the sandwiches into a tupperware in the freezer immediately to prevent melting.
