Recipes Wanted!
Not sure where to post this, here or under charity. I work for a domestic violence agency. We're putting together a cookbook as part of our fundraising efforts. We'd love to be able to put together a good size book.
Anyone interested in providing a recipe, please either post it here or FM me so we can include your name.

My Escarole and Beans
Ingredients: o Two pieces bacon o One head escarole, cleaned and white ends cut off o One tablespoon garlic, chopped fine o Two tablespoons olive oil o Twelve ounces chicken broth; canned broth is fine o Twelve ounces of canelli beans o Pecorino Romano cheese
Cooking Procedure: Cook bacon until crispy, approximately 8 minutes omn medium high heat. Discard cooked Bacon leaving bacon fat in the pan o Saute greens in olive oil and bacon fat for three minutes at medium heat; turn greens several times o Add garlic, cook a minute or two longer o Add chicken broth and beans together. Cover and cook about three minutes o When greens are tender, serve in bowls. Sprinkle with grated Pecorino Cheese.

Beef Enchiladas
INGREDIENTS 1 cup chopped onion 1 pound sirloin steak, cut into bite size strips 1 teaspoon minced garlic 2 (7 ounce) cans diced green chile peppers 4 cups tomato sauce, divided 2 teaspoons chili powder 1 (12 ounce) package corn tortillas 1/2 cup fresh salsa 3/4 cup chopped black olives, drained 2 cups shredded Cheddar cheese 1/2 cup sour cream 1/3 cup chopped green onion
DIRECTIONS Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large casserole dish. In a skillet over medium heat, saute onions until almost translucent. Stir in beef, garlic, and chile peppers, and continue cooking until the meat is no longer pink. Pour in the tomato sauce and chili powder. Mix thoroughly and heat through. Remove from heat. Spoon a little of the meat mixture into a corn tortilla and add small amounts of salsa, Cheddar cheese and olives. Fold the tortilla up and place in the prepared casserole dish. Repeat for the remaining tortillas using up all of the meat mixture. Reserve 1/2 cup of Cheddar cheese for topping. Pour the other half of the tomato sauce and sour cream over all of the tortillas. Top with green onions and 1/2 cup of reserved Cheddar cheese. Bake 30 minutes in the preheated oven, or until hot and bubbly.

If I want to make it with less fat I will use balsamic vinegar instead of the mayo. I also add plenty of garden veggies!!!

Anise Cookies
2 cups sugar 2 sticks softened margarine 1 oz anise extract 5 eggs 3cups flour confectioners sugar (to dust on top)
Cream together sugar and margarine. Add eggs one at a time. Slowly add flour. Blend in anise.
Bake in a greased 10x15 pan for 20-25 minutes at 350 degrees. Sprinkle with confectioners sugar and cut into bite size pieces. (these are little bite size cookies, not anise toast)

1 1/2 - 2 lbs of shrimp
In a large bowl stir together: -1 cup flour -2 teaspoons salt -1 teaspoon baking powder -1/2 teaspoon red pepper flakes
Whisk in: -3/4 cup orange juice -1/2 cup milk -2 eggs
Put the shrimp into the batter and let sit for 30 minutes. Meanwhile, mix together 3 cups shredded coconut and 1 cup unseasoned bread crumbs. After the shrimp come out of batter press them in the coconut mixture.
While shrimp is in the batter, also heat about 3 cups vegetable oil in heavy pot or deep fryer. Place shrimp in oil and fry in small batches turning 1-2 times. Each batch will take about 4 minutes. Remove to paper towel to drain.
