I made this last night and it came out great!! It's very easy to make too.

Ingredients:
1 ready made pie crust
1 small container(8 oz.) ricotta
1 egg
1/4 onion sliced
1 package of frozen chopped spinach (10 oz)
5-6 slices of munster cheese(depends on how much cheese you like)
salt and pepper to taste

Cut 3 slices of munster cheese and line bottom of pie pan(cut cheese in any way as long as it lines the bottom of pan.
Thaw frozen spinach and drain very good.
mix spinach, ricotta, egg, onion, salt and pepper place in pie pan.

Cut the last few slices of munster cheese and place on top of pie.

cook in 350 degree oven until cheese melts and becomes golden brown.
