Quiche Recipes
I fed my son some quiche tonight and it was a bit of a success..so I thought I would make a homemade quiche this weekend...anyone have any easy recipes???

I got this from MrsNYPDsGirl and it was easy and very good!!!!
Crustless Zucchini Quiche Ingredients 4 eggs 3 c. sliced zucchini 1 c. Bisquick 1/2 c. Parmesan-Reggiano cheese mix 3/4 block Mozzerella (cubed) 1 med. onion (chopped) 1 garlic clove (chopped) 1/2 c. oil Salt and pepper Preparation Beat eggs first then mix all together. Grease quiche dish. Bake at 350 degrees for about 40 minutes. Delicious hot or cold!

I've made a very similar recipe before, it's really really good. Now I feel like making quiche too!

I use this for a mushroom quiche, it isnt too cheesy, but really light. I adapted it from a lorraine recipe, so here is the lorraine recipe.
1 pie shortcrust shell 2 tbsp olive oil 1 onion diced 4 slices bacon (use ham, I got it from an Australian cook book and they dont have bacon like the US has, it is like ham) 6 medium eggs (5 large, since eggs in the US are bigger than here) 8 oz. cream salt and pepper 2 tbsp parsley 4 oz parmigiano
Preheat oven to 350.
heat frypan over medium heat and add oil and onions and cook for 4-5 mins until onions soften. Add bacon and cook for 3-4 mins. remove from heat and let cool.
beat eggs with cream, s&p, parsley and cheese. spoon onion and bacon mix into shell and pour egg mix over onion and bacon mix. Cook for 30 mins until golden and set in middle. if it gets golden and isnt set throw some aluminium foil over it.
For mushroom: add 6-7 oz of chopped mushrooms to pan while cooking onions. Cook for 5-6 mins until mushrooms are softened. For those that cant eat pork, cut pork out of the mushroom recipe.
good light quiche, not too rich.

I've made tons of quiches (my former butt sized was once proof ) At any rate, you don't have to adhere to any specific recipe.....
just make a good pie crust (can even come from a fruit pie recipe), blind bake it (bake in the oven with weights in the middle at 400F for about 20 min), take it out and let it cool a bit.
Then, find a good basic quiche recipe (including only eggs, cream, milk, salt... ignore the fillings)
You can add whatever fillings you want to it. my fav is cheddar cheese, spinach (squeeze out excess moisture), cooked bacon, fried onion, & mushroom.....
then return it to the oven and bake until the egg filling is lightly golden... roughly a 1/2 hour.
