Veggies, with non-veggie DHs!

So, since I have quit my job, we need to find cheaper ways to entertain ourselves. One of our ideas is to cook nice dinners together-- something that requires more time and effort than a weekday meal-- in lieu of going out to eat.

Anyone have any good recipes??

I can cook anything, although I do prefer something with not a lot of ingredients-- It tends to cost too much to make one meal when you have to buy a lot of different stuff.

If you make things with portabello mushrooms, it will give it a meaty taste... Also, anything with seitan...

sorry - no recipes, but just someways of getting DH to enjoy your food with a meaty texture!

That's a good question! DH and I haven't encountered this issue since I made the switch, only becuase we hardly ever cook with our schedules. I'm okay eating fish occasionally, so I made a shrimp stir fry one night that he liked. Do you think you could make a stir fry base with the vegetables and then make meat separately so your DH can add it in if he wants?

ok--- well, I hate mushrooms and seitan is like my least favorite meat substitute. My favorite is Tempeh, but I find that kinda hard to cook-- and it requires too much oil to stay moist.

We have cooked the other way in the past-- DH will make a piece of meat and mix it into whatever else we have made... but I wanted to cook something a little more special.

I'll just pour through my veggie cook books-- if I find anything good, I will post!

If you like pasta, I really love Israeli couscous. There are a bunch of different ways to make it, some more complex than others, but it's really tasty. I love it with dried cranberries, some curry and almond slivers. I'm not sure if it's a whole meal by itself though!

I am a HUGE cous cous fan... I used to make it all the time. Maybe that is something to reprise, although I do need a protein element.

cous cous is also really easy to make... so, it's not like-- ok. let's cook dinner tonight. It's like, ok, let's eat in 15 mins.

Apparently, you have not heard about my culinary skills. I tried to make a chopped salad once, the estimated prep time was 15 minutes. Well, an HOUR later, I had my salad. Chat Icon Granted, I was using my $5 Ikea knives (that's $5 for the whole block) but still....

For me, I think cous cous would be an all night event. So sad Chat Icon

well when you buy the Far East brand cous cous-- which is more traditional cous cous-- as opposed to Isreali-- you just chop and add everything else you want, throw it in with the boiling water and voila, it's done like 10 mins later. You should try it. I like the Parmesan flavor the best.

I once posted a great cous-cous recipe, almost a stew. It has a bunch of ingredients, but makes so much food you'll have leftovers for a week. Butternut squash & other veggies w/ israeli cous cous. There's lots of chopping involved, but the actual cooking is pretty simple.

Do you have veg cookbooks? My favorites are Real Food Daily and La Dolce Vegan.

Will your hubby eat veg sometimes or does it need to be a meal you can add meat to?

I'm no help with the recipes, but what about making an appetizer and/or dessert to go with your meal to make it more special than a weekday meal. That will also take more time.

What about fondue? You can dip dip veggies, bread, and meat in it?

that looks like my kind of recipe-- I love everything iin that! That might be a good thing to make also if we are having company.

I have a bunch of cookbooks-- which I usually never reference... cause I never have time to cook, but now we are going to make an effort to do that since we are trying to not go out as much.

He will totally eat veggie-- but it needs to be hearty. He likes meat a lot--- but he can totally do without it. He is not like, this is not a meal unless there is meat in it.

A veggie lasagna is always great! Spinach, sundried tomato, zuchinni, grated carrot ect......some ricotta & mozzerella........you could make a Beshamel Sauce to put in it!!
