In need of some Eggplant recipes
I have Eggplant and I am looking to make something - but I don't know what
Any suggestions?

i like to peel it and chop it into bite-sized chunks, throw it into a baking dish with 1 red pepper, 1 green pepper, and 1 onion, also chopped into large chunks. drizzle with olive oil and sprinkle on some minced garlic. roast them in the oven until tender and toss with pasta, and finely chopped fresh oregano, basil, and thyme... and throw in a few chopped sun dried tomatoes (from a bottle) and a little bit of the oil they come in. season with salt and pepper and you're good to go!

I had this recipe at my aunt's house recently and it was so good. You could subsitute the squash for the eggplantpenne with roasted veggies

I like fried eggplant.
I slice the eggplant very thin - because I like it to retain some crispness. I sprinkle the slices with a little salt and let them weep for 15 minutes before covering them with milk. Then I put it in the fridge overnight.
The next day I drain the milk, dredge the slices in seasoned flour (flour, salt, pepper, Italian seasoning). Then I dip it in beaten eggs and dunk in a mixture of breadcrumbs and freshly grated parmesan.
Then I fry it in good quality olive oil and drain it.
Once it is drained you can layer it or roll it with sauce and cheese for a parmesan. I like to use it on Italian sandwiches - cappi, genoa, provolone.
