Creamed Spinach
Anyone have a homemade recipe for this?
I usually just buy the frozen kind but wanted to try something different.

nuke a couple packs of chopped spinach. Squeeze out the excess liquid. In a sauce pan, sautee a diced onion in butter. Add a minced garlic clove, salt, and a bit of cayenne. Then add the spinach. Add light cream and stir.

We eat at The Palms alot and they have an amazing creamed spinach. I'm almost 100% they have the recipe on their web page.

I made this last year for Thanksgiving. Everyone loved it.
Serves: 6-8 Prep. Time: 0:35
5 Tbls. butter OR margarine - divided 1/4 cup all-purpose flour 1/4 tsp. salt 1/4 tsp. black pepper 1 dash ground nutmeg 1 cup half and half cream 4 oz. cream cheese - low-fat okay 1 sm. onion - minced 3 cloves garlic - minced (2) 10 oz. pkgs. frozen chopped spinach - thawed 1/4 cup water 1/4 cup grated Parmesan cheese
-In a 2-quart saucepan over medium-low heat, melt 3 Tbls. butter; stir in flour, salt, pepper, and nutmeg; slowly whisk in cream; stir in cream cheese. -Increase heat to medium; whisk mixture constantly until thick and smooth; remove from heat and set aside. -In a skillet over medium-high heat, cook onions and garlic in remaining 2 Tbls. butter until transparent; stir spinach and water into pan. -Reduce heat to medium-low; cover; simmer, stirring occasionally, for 8 minutes. -Stir spinach mixture into creamy mixture; return to medium heat; heat, stirring often, until warmed throughout. -Remove from heat; fold in Parmesan.

I make this all the time
Creamed Spinach Ingredients 3 tablespoons margarine or butter 3 tablespoons flour 2 cups milk Dash nutmeg Salt and pepper 4 oz cream cheese ½ cup grated Parmesan or Ramano cheese 1 medium onion, finely chopped 2 cloves garlic, minced 1 or 2 tablespoons butter 2 packages frozen chopped spinach, thawed, squeezed dry
Preparation Combine flour, nutmeg, salt & pepper, and butter in saucepan; heat and stir to make roux. Stir in cream cheese. Add milk (more if necessary) and Parmasean cheese. In another pot, sauté onion and garlic; add spinach. Cook 10 minut4es, or until spinach is hot and onion is translucent. Add white sauce and mix thoroughly. Add salt and pepper.

I did a search and couldn't find anything except their cookbook.
