easy and healthy side dishes?

I'm looking for recipes for easy to make/quick or freezable side dishes for daily dinners.

I love asparagus. I slice it put it in a cast iron pan, drizzle with olive oil and salt & pepper and cook it on top of the stove or bbq. I also like marinated zucchini. I cut the zuccchini in half lengthwise, then cut it in 1/2 width wise. Put in a pan with a clove of smashed garlic, salt & pepper and some olive oil and grill it. You could also broil it. Fast and easy. Asparagus is also good baked in the oven.

We do something similar with our apsaragus - salt & rosemary (I don't like pepper), drizzle of olive oil and bake for about 10 minutes in the oven. You want to get them out before they get mushy.

Steam broccoli, top with margerine & garlic salt

I just bought a new grain mix from TJ's with israeli cous cous, scarlet quinoa, orzo and garbanzo beans that I can't wait to make. Those are all good things to make - cous cous you can add chopped veggies to, too.

I make a big bean salad and eat it as a side dish a few times over the week a lot of the time. Packed with protein and SO yummy.

Holy cow this sounds delicious!

For sides I usually just do steamed veggies, especially cauliflower or carrots or whatever else is in season. My other favorite side is couscous -- it just takes 5 minutes to cook and is equally good hot or cold. I throw in whatever fresh veggies we have around, plus nuts (almonds), olives, beans (mostly chickpeas) or fruit (dried cranberries).

we've been doing those bird's eye steam fresh veggies, that you just microwave in the bag... and they're frozen, so you can stock up on them Chat Icon they're really good, and we usually just "dress" them up with a little garlic or butter or parmasean cheese

well, we nuke broccoli and cauliflower in a plastic bowl with a tad of water (it takes roughly 16 min, with a stirring or 2)

then we make a low-fat cheese sauce. Sautee a diced onion in butter until clear. Add flour to make a roux. Add milk and bring to a simmer. Once it has thickened, add shredded low-fat cheese (cheddar or mixed cheeses) and salt.

Drain the veggies and toss them in the sauce. It's tasty like mac & cheese, but much more healthy Chat Icon

try the ziplock steamer bags. they're amazing and soo easy. they have the amt. of time to cook different veggies on the front of the bag. Its nice to be able to go to the store and get any veggies to steam quick...

I love using the ziplock steamer bags. It is the easiest. I have steamed almost every veggie in them.
