This is my favorite pecan pie recipe: Oatmeal Pecan Pie
Instead of the Pillsbury pie crust, I always make Alton Brown's instead -- it's the best (and easiest) homemade pie crust I've ever had: AB's Pie Crust

I make Dear Abby's Pecan Pie every year for Thanksgiving. It's delish!
1 (9-inch) unbaked pie crust
1 cup light corn syrup
1 cup firmly packed dark brown sugar
3 eggs, slightly beaten
1/3 cup butter, melted
1/2 teaspoon salt
1 teaspoon vanilla
1 heaping cup pecan halves
Directions:
Heat oven to 350 degrees. In a large bowl, combine corn syrup, sugar, eggs, butter, salt and vanilla; mix well. Pour filling into unbaked pie crust; sprinkle with pecan halves. Bake for 45 to 50 mins or until center is set. (Toothpick inserted in center will come out clean when pie is done.) If crust or pie appears to be getting brown, cover with foil for the remaining baking time. Remove from oven and cool.

I usually make this one...
Souther Pecan Pie
INGREDIENTS:
3 eggs
1 cup white sugar
1 cup corn syrup
2 tablespoons butter, melted 1 teaspoon vanilla extract
1/4 teaspoon salt
1 1/2 cups pecan halves
1 recipe pastry for a 9 inch single crust pie
DIRECTIONS:
1. Preheat oven to 400 degrees F (205 degrees C).
2. Beat eggs slightly in medium bowl. Beat in sugar, and then blend in syrup, butter or margarine, vanilla, salt, and pecans. Pour filling into unbaked pie shell.
3. Bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C), and continue baking 35 to 40 minutes; the pie will be brown and slightly puffed.

Chocolate Pecan Pie
-makes 2 pies-
1 stick of butter
1 c sugar
1 c light corn syrup
4 eggs, well beaten
1 tsp vanilla
1 c chopped pecans
6 oz of semi-sweet choc. chips
2 small pie crusts (or you can use 1 deep dish)
Mix butter, sugar & corn syrup
Then add eggs, vanilla, pecans, choc chip
Mix together, and pour into pie crusts.
Bake 50 minutes at 350

I love Texas Chocolate Pecan Pie it is excellant. I cheat and use a frozen pie crust.
