Brunch recipes?

This was asked about 6 months ago, but I wanted to throw it out there again in case there are some new ideas.

Anyone have any good breakfast/brunch recipes? Preferably things that can be prepared ahead of time and just popped into the oven?

I saw on an old thread the french toast casserole. Yum! And I was thinking homemade coffee cake...

But I dont want it to be ALL carbs! Chat Icon

Any advice would be great! Thanks!

My vote was for the french toast casserole too Chat Icon You can also make a quiche or some kind of an egg dish. I dont know that you can make it beforehand, but they are pretty quick and easy to make.

maybe some fruit & yogurt?

Use a trifle dish (or a large clear glass bowl) and layer fruits & yogurt--maybe top with granola. People can scoop it out into bowls or cups.

How about crepes? Make them ahead of time, keep them warm and use fillings like jams, fruits, sugar.

yeah, that crustless zucchini quiche recipe that was recently posted!!!!

I make quiche all the time... just make a regular pie crust, blind bake it for about 20 min at 400 (with weights). Then grab a well-reviewed basic quiche recipe off of epicurious.com, and add whatever cooked veggies and cheeses you want. The only rule is that it can't be too wet... so drain spinach and other wet veggies well before adding. Bake about a 1/2 hour, and le voila!

I usually make a spinach onion bacon and cheddar quiche.... and use a combo of cream and milk.... it's rich, but it's for company, so that makes it ok Chat Icon

potatoes/eggs/kielbasa

Serves 4

1 ring of hilshire farm polish kielbasi
2 eggs
5 small to med potatoes
1 onion chopped
olive oil - just enough for sauteeing onions
4 pats of butter

peel and boil potatoes until they are tender -- fork should be able to go all the way through with ease , but not as mushy as if you were making mashed
take potatoes out of water when ready and slice - set aside

slice kielbasa and fry in pan (i sliced it in disc like shapes, and then cut in half again - but you can just leave in discs)

in separate frying pan , sautee onions with a little olive oil until caramelized

add potatoes to the onion pan and crush w/ a fork, making a pancake shape in the pan. Let cook and then flip with spatula

it won't stay in pancake shape but that is ok..as long as some of it is clumpy

scramble two eggs separately then add to potato onion mixture, toss a few times with the spatula -- all while on a med-high flame

lastly add the kielbasa & about 3 pats of butter - same thing, flatten like a pancake then flip, you can flip in sections and brake up a bit so eggs, kielbasi, and onions mix well

then serve
