minor cooking vent: inspiration in the supermarket not terribly well thought out

good grief.

We wanted to eat something different, so we picked up a smoked picnic ham... I thought to myself, 'how hard could it be to cook'

sooo, what's the problem? well, there are a million different recipes, all with very different ways to prepare the ham... soak it overnight.... bake it while submerged in liquid....

I decided to go with the 'bake it on a rack' method. Even then, you can do it, skin down, skin up, or skin off.... both with or without foil covering it.

Also, some recipes say cook to 165, others say 190... that's quite a difference.

in the end, I went with a recipe out of mom's 40 year old cookbook. Basically, I coated it in honeymustard and brown sugar... I decided to cover it with foil, and I'm baking it... I guess until it hits 190... just to be safe.

I hope we're not going to eat a salty mess (becuase it wasn't in liquid), a dry mess, a greasy mess, or a just a mess....

I'll let you know how it goes... dinner will be done at about 11pm (I had a late start) Chat Icon

do any of you know how to cook a partially cooked smoked picnic ham? I'd like to know... for the future.

update....

it came out pretty good, and now I know exactly how it should have been cooked...

for a partially cooked smoked picnic ham, remove the skin.... cut a diamond pattern on it... coat with a 50/50 mix of guldens mustard and honey. Then coat with brown sugar. Bake at 325, covered with foil, until the center reaches 160....

I left the skin on, so all the tasty coating was on something rather inedible Chat Icon

wouldn't recommend making this for company, becuase it was VERY hard to carve with any finesce..... (I normally have no trouble carving up birds or other roasts)
but it was very tasty!
