stuff the cavity with onions, lemons, oranges and rosemary stalks. Put some butter and Mrs Dash on the skin and cook for the amt of time needed.

I think the most important part of roast turkey is purchasing one that has already been brined.... it seasons the meat, and helps it retain moisture.
I just slip sage and thyme between the skin and meat, and stuff the cavity with lemon sage and thyme, rub the skin with poultry seasoning, and bake uncovered at 350 until an internal temp (in the thigh, for a whole bird) of 165.
Then I cover it with foil and let it rest on the counter while I make the gravy. (I sautee shallots, sage, thyme, and sometimes mushrooms in the dripping grease, add chicken broth, poultry seasoning and salt. I shake milk and flour in a tupperware dish and dump it in, and stir until its thickened.)
