Re: Turkey brine?
a lot of turkeys are pre-brined... butterball, murrays free-range, kosher birds.... if that's the case, you're in the clear
if not.... alton brown has a good recipe...

Re: Turkey brine?
Brine is EASY.. you can use just about any flavoring you like.
For a classic taste I like to use 1 part water, 1 part chicken stock and 1 part orange juice. I add salt, a few stalks of chopped celery, 2 broken carrots, a chopped onion and some fresh rosemary, thyme and sage. I also throw in a halved lemon and a halved orange.
Sometimes I will use chicken stock and wine with salt, herbes de Provence, oranges and lemons.
It really does make a difference. The meat seems juicer and is infused with a delicate flavor.
