Re: New Orleans
How exciting!! I am looking to go there in Jan/Feb also! Where are you staying??
My favorite must dos:
Pat O'Briens for dueling pianos & hurricaines. Desire (at the Royal Sonesta) for Po' Boys Mr. B's for a fabulous dinner Commander's Palace for their Jazz Brunch - exquisite food and 5 star service! Beignets at Cafe Du Monde
There's a lot of strolling around the French Quarter - galleries, the vendors at Jackson Square, the Riverside Marketplace, etc. Plus drinking & dancing in many places on Bourbon Stree.
Once I went on a Garden District tour which was really interesting - they also took you to one of the cemetaries. There are all sorts of walking tours available too.

Re: New Orleans
Christine gave you some great suggestions. There is also a grea Oyster House in the French Qtr. Where are you staying? Oh a ghost tour, and drinks at Lafittes are also musts in my book.
