I don't have time to be cerative anymore these days.

My weekday meals include: shake and bake pork chops, steak, salads, meatloaf, chili, fish (buy Trader Joes already marinaded and just have to bake), lamb chops, quesadillas, chicken (I often marinade and bake - I buy all types of marinades and sald dressings for this or I stuff usually spinach and mozz and bake), salads.

All my quick recipes seems to involve chicken.

Baked chicken - So easy! Stick the chicken in a pan, sprinkle Lawry's salt over them and bake at 400. Small pieces like legs take about 40 min.

Korean Chicken - I don't remember what my friend said the actual name of it was, but... Take thin cutlets, sprinkle with salt and pepper, dip in flour, then dip in egg, then dip in tempura flakes and fry. So good and a different flavor than your standard cutlet!

Chicken Crescents - Cut 1 pound of chicken into cubes. Coat with mix of flour, salt and pepper. (1/4 C flour, then salt and pepper to taste) Heat oil in large pan and add chicken along with a can of chicken broth. At this point I also add frozen peas and sliced carrots. Cover and cook on medium low for about 15 min. Then take 2 pkgs of Pillsbury crescent rolls, break them into squares (so 2 together) and squeeze the perforated part together so it makes a square. Have these on a cookie sheet. When the chicken's done use a slotted spoon to scoop the chicken and veggies into the dough, then pull up all the corners of each crescent and seal it so it looks like a pouch. Bake as directed on the Pillsbury pkg.

Chicken a la King - All done in the microwave with the exception of the rice!! So easy!! Melt 1/4 C margarine in a casserole dish for 45 sec, covered. Add 1/2 C chopped green pepper and 1/2 C sliced mushrooms and microwave for 2 min, covered. (I choose to leave those 2 ingredients out.) Add 1 can cream of celery soup, 1 tsp sugar, 1/2 tsp salt, and 1/2 tsp worcestershire sauce and microwave for 2 min, covered. Add 2 C cooked chicken (I just use Tyson's pre-cooked chicken) and microwave for 5 min, covered. Serve over rice.

Salmon wrapped in foil with seasoning or tomatoes and garlic and bake for 15 minutes. Make a side of steamed veggies.

We are low carbers, so less fun

Tacos are fast and you can get sour cream, cheese, guac, etc and make a production (we do it without shell)

I make chicken soup via crock pot-four cans or so of chicken broth, turnips, onion, celery and chicken on the bone...8 hours later-ta da!

I really need some new ideas! Chat Icon

our menu for the week

monday crabcakes - crab meant (black fin) may shallots red peppers mayo, low carb breadcrumbs


tuesday: shrimp cocktail , cheese, and salad

wednesday: chicken stir fry .....cut up chicken breast in a pan with frozen mixed veggie bag

thursday: egg white omelette with turkey onions tomatoes and pepper jack cheese

Friday flank steak and boccili with garlc and herb sauce and a salad
