Re: Okay, hear me out here...
could you maybe just peel the potatos today and leave them ina pot of water in the fridge overnight? in my experience, potatos don't tend to re-heat well (then again, i'm not really all that experienced with cooking- just eating ).

I totally agree. If you want to cut down on prep time, I would peel your potatoes and leave them in water over night. They take no time to do and I dont find they take the same reheated. and all the time it would take to get them to where they needed to be, you could have made them fresh anyway.

Do I cook the potatoes first??? How should I do this? Peel, chop, cook, put in water in fridge and then mash tomorrow?

I would just peel and cook the potatos tomorrow. Potatos that sit in water overnight just dont taste the same the next day...IMO.

you would peel them today. Put them in water in the fridge. Change the water every few hrs to keep fresh.
Cook tomorrow and mash tomorrow.

Re: Okay, hear me out here...
Okay, I was going to take everyone's advice, but I wound up making them 12/24 because I was chatting with a friend and she told me that she uses her crockpot to reheat potatoes, sooooo, on Monday night, I put them in the crockpot dish, put that in the frig, and 2 hours before dinner was served, I put the crock in the crockpot, with a quarter stick of butter and put it on low...they came out awesome.
