need frying tips
whenever I fry anything (in a regular pan w/lots of oil), the first batch always comes out the best....what do you do to make sure your 2nd and 3rd batches are just as pretty/golden brown and dont have chunks of burned bread crumbs on them? Do I really need to use new oil for each batch?

I use a slotted spoon to take out the browned bits in between fyings and also,I will change the oil if it gets too brown
