Flank Steak-Crockpot recipes
Any suggestions?!?!? I have to cook my flank steak by tomorrow and i would like to use my crockpot....they only problem is that i have no idea how long i should cook the flank steak for and i have no recipes.....i was going to just throw stuff into the pot and wing it.....but since i'm going to be at work i'm a little nervous!

I posted a flank steak recipe a while back, but not a crock pot one. If you want, i can find it. It was "stuffed" with artichokes, feta cheese, roasted peppers and garlic.

if i'm thinking right.. flank steak is like one of the thinnest steaks out there... so really you can just cook it in a skillet or grill pan for like 4 minutes a side and it gets to a nice medium ( a little red on the inside) so in like less than 10 minutes it would be done... not sure about it in the crockpot, but i know it cooks pretty fast other ways... we usually just put some montreal grill seasoning and balsalmic vinegar on it.. and serve it with some oven roasted potatoes. yumm!!

1 flank steak, beaten to tenderize 12 oz jar artichoke hearts 12 oz jar roasted peppers block feta cheese garlic fresh spinach (I didn't even notice it, so I left it out the second time)
Put all the ingredients in the center of the steak, folding steak over to close it. Tie it shut. Place open side down (mine did not close all the way because I had so much stuff in it). Bake 350 for one hour. Slice about 1" thick.

Slow Cooker Steak Burritos (7 Points)
Makes 10 servings
2 flank steaks (about 1 lb. each)
2 envelopes reduced-sodium taco seasoning
1 med. onion, chopped
1 can (4 oz.) chopped green chilies
1 tbs. vinegar
10 fat-free flour tortillas (7")1 ½ cups (6 oz. (reduced-fat shredded Montery Jack cheese
1 1/2 cups chopped seeded plum tomatoes
3/4 cup nonfat sour cream
Cut steaks in half; rub with taco seasoning. Place in slow cooker coated with nonstick cooking spray. Top with onion, chilies, and vinegar. Cover and cook on LOW for 8-9 hrs. or until meat is tender. Remove steaks and cool slightly; shred meat with 2 forks. Return to slow cooker; heat through. Spoon about 1/2 cup meat mixture down the center of each tortilla. Top with cheese, tomato, and sour cream. Fold ends and sides over filling.
Per serving: 339 cal, 580mg sod, 57mg chol, 31g carb, 28g prot, 10g fat, 2 g fiber Points: 7

I made this last night with just the spinach and feta, and it was DELICIOUS!!!
