Grace loved it! My SIL made it for her in Hawaii and gave me the recipe. She made it with coconut milk instead of regular milk (which is GREAT if your kids are allergic to dairy). Grace is not allergic to milk, but she loved the coconut milk. I had some too and not to toot my own horn, but it was YUM-O! Chat Icon Chat Icon

If you want me to post the recipe, let me know. It was so easy to make and start to finish took about an hour (including cooing time).

Ok, here's the recipe! I found the tapioca pearls in the "bulk food section" of the health food store. I bought all organic ingredients, but you can use non-organic too. Enjoy!

Dairy Free Tapioca Pudding:
Ingredients:
2/3 cup Tapioca (Small Pearl)
1 1/4 cups Water
4 1/2 cups Coconut Milk
1/2 tsp Sea Salt
4 Eggs, separated
1 cup Sugar
1 tbsp Vanilla

Soak tapioca in water for 30 minutes in a large (2 quart) saucepan. Add coconut milk, salt and lightly beaten egg yolks to tapioca and stir over medium heat until boiling.

Simmer uncovered over very low heat for 10-15 minutes. Stir often. Beat egg whites with sugar until soft peaks form. Fold about 1 cup of hot tapioca into the egg whites, then gently fold mixture back into saucepan. Stir over low heat for about 3 minutes. Cool 15 minutes then add vanilla. You can also add some nutmeg to taste.

Makes 7 cups.

mmm sounds good I'll have to try that, I love using the BIG tapioca pearls too! yum!

The coconut milk s really what makes it sooooo tasty IMHO, but you can use reg milk as well.
