Goat cheese
What can I do with it besides on salads which is how I usually use it but have some extra and getting tired of the salad thing? TIA!

I had a dish at an italian place with goat cheese in it and it was yummy
it was bow tie pasta with a garlicy, chunky tomato sauce, then on top there were disks of goat cheese that kind of melted fom the heat of the sauce. I love it!!

Is it the crumbles or more like a log? If crumbles, I mix it up with some olives, basil and olive oil, and use it for stuffed tomatoes.
I also make a goat cheese and leek tart.
If you eat meat, you can stuff chicken breasts with goat cheese, artichoke hearts and sundried tomatoes.
If a log, I make it into little disks, bread in panko and broil until crisp.

stuff boness chicken breasts or pork chops with spinach and goat cheese
Pizza (I think someone mentioned boboli?) topped with goat cheese, canned pears, and baby spinach
Sauce (for pasta or over chicken or pork) 1 tablespoon extra-virgin olive oil 3 tablespoons dry white wine 1 cup chicken broth 1 teaspoon fresh parsley 4 ounces herbed goat cheese salt and pepper, to taste
Combine olive oil, wine, and chicken broth in a saucepan; simmer over medium heat until reduced by about 1/2. Add the parsley, goat cheese, salt and pepper Continue simmering, stirring frequently, until sauce is thickened.

Ive used it in quesidillas w/ chicken and black beans. I also use it sometimes just to smear on grilled chicken

I would make a pizza w/ goat cheese and hummus no sauce It's so good I would just smear the hummus on a wrap or boboli & the smear on the goat cheese, add spices and put in the oven...

There is nothing healthy about this recipe, so I usually serve it with a spinach and pear salad to cut down on the guilt.
Leek and Goat Cheese Tart -- Cook's Illustrated 2 medium leeks, diced (should have 2 cups) 2 tbsp unsalted butter 2 eggs 3/4 cup milk 3/4 cup heavy cream or half and half 1/2 tsp salt 1/2 tsp pepper pinch nutmeg 4 oz. goat cheese, crumbled 1 9-inch partially baked pie shell (warm)
Preheat oven to 375. Saute leeks in butter over medium heat until soft, 5-7 minutes.
Meanwhile, whisk all remaining ingredients except goat cheese in bowl.
Spread goat cheese and leeks evenly over bottom of pie crust and set on oven rack. Pour in custard mixture. Bake untl lightly golden brown and knife inserted near edge comes out clean, about 32-35 minutes.
Serve warm or at room temp.

the other day i had my g/fs over and we had wine and cheese as an appetizer one of the cheeses was goat cheese drizzled with honey and we ate it on a piece of brick oven bread....SOOO GOOD! I want some now!
