Need vegetable ideas....
I feel like I am making the same vegetables every night for dinner, just rotated every few nights.
Anyone have any good suggestions for vegetables to go with dinner???

We do the following:
Asparagus (whenever it's on sale)..blanched for 2 minutes then baked at 350 for about 10 minutes sprinkled with lemon juice, butter pats, salt, pepper, and pecorino.
Sweet Potatoes..2 inch dice, mixed together with olive oil,rosemary,garlic, salt, pepper, and paprika.
Brocolli..."breaded" baked in the oven
Sesame greenbeans..
Sauted mushrooms..I buy them already sliced and then saute in butter and olive oil with tarragon.
BokChoy..StirFried in oil with soy sauce, ginger, garlic, and sesame oil.
Baby Spinach..wash spinach..heat olive oil in pan, saute garlic, put Spinch in pan, remove from heat throw on cover..Spinach will wilt nicely..toss after a few minutes to coat.

Some other ideas.. Sauteed mushrooms with some garlic and an onion.
Diced red potatoes...cover the pan with oil, season potatoes with salt, pepper, rosemary, oregano, garlic. Bake for about 30-45 minutes depending on your oven.
Steamed zucchini..I usually just add a drop of butter and some seasoning for taste.

Asparagus: trim stems, bake at 375 (or whatever the oven is on for whatever you're making) w/ olive oil and salt for about 10 minutes.
Brussel sprouts: cut in half, cut side down on oiled baking sheet, 400 for 15-20 minutes. Toss with minced garlic after 10-15 minutes (optional).
Zuchinni: slice thin, saute with olive oil, minced garlic and rosemary.
Sweet potatoes: Slice 1/4 inch thick, 375 (or whatever the oven is on for whatever you're making) w/ olive oil and rosemary for about 10 minutes.
Bean salad: 1 can each kidney, pinto & garbanzo (drained), 1/3 cup apple cider vinegar, between 1/8 & 1/4 cup olive oil, 2-3 teaspoons sugar, salt, dill (tons), sage, rosemary, thyme. Mix everything together, chill for a few hours/overnight.
Corn on the cob (summer): Boil. Eat.

Cut zucchini in half and scoop out the middle Mix the insides with some garlic, crushed red pepper, chopped onions, I mash some kidney beans in the mix and I have diced in some white mushroom caps. Place mix back inside the zucchini halves and place on a baking sheet. Sprinkle the top with some bread crumbs and either a little olive oil or butter and back until crunchy. YOu can also top with a little parmesian cheese
So simple and yummy and you can play around with the ingredients you add to the mix
