That sounds good. Which protein powder do you use? I use Designer chocolate whey protein. It's pretty good, but could use a little more flavor. When I'm really low-carbing, I don't add my usual banana to mix - just some peanut butter and skim milk (along with amino acids, mega green powder and flaxseed oil).

here is the recipe...there are lots of variables, so you can play around with it until you find the one that you like best!
Flax Muffins
2 eggs 1/4 melted butter or olive oil (I use olive oil) 1 cup low carb whey protein powder flavor of choice 2 teaspoons baking powder 1 teaspoon salt 2 cups flax seed meal 1/4 cup Splenda (I usually use less, if at all...it depends of the flavor whey powder) 1 cup water 1/2 cup flavored sugar free syrup (I use Davinci, usually chocolate, cherry or vanilla) this can be substitued with water, just use the full amt of Splenda then... 2 teaspoons extract of choice (I usually use vanilla, almond or banana)
In a bowl, mix eggs and butter or oil. Add all other ingredients and mix well. Use a heaping 1/4 cup measure to pour into muffin tins and bake at 325 for 20 minutes or so...
enjoy!!!
