Greek Dressing from the Lindencrest Diner
My FAVORITE thing in the world
I'm trying to figure out how to make it at home. It's a vinagrette but kinda thick- a pinkish color. SOOOO yummy.
I've had the same type at the greek place on 231 that just closed down.
Anyone have any ideas or a recipe for a REALLY good greek dressing? I haven't found a bottled one I like yet.

We honeymooned in greece and the islands, and fell in love with greek salads.
the REAL greek salad isn't anything like what they serve here. For starters, there is no lettuce! Also, there is no vinegar in the dressing... The flavor relies solely on the wonderfully fresh veggies. Try this out... I promise you will eat more salads this summer than you ever have before
Cut up one large beefsteak tomato into chunks/wedges... this is the 'salad base'
very thinly slice about 2" of cucumber, red onion (to taste), and a 1/2 a med green pepper. Put it on top of the tomato. sprinkle a handful of good kalamata olives on top. Put a slice (about a 1/3" thick) of feta on top.
Now for the dressing..... sprinkle 1 tablespoon of dried oregano on top of your salad. Then drizzle a good extra virgin olive oil on top (make sure all oregano gets wet).
When you eat it, you break up the cheese... the tomato juice, feta crumbles, onion, and oregano make the most outrageous 'dressing' you will ever taste... can't bottle that!
