Beets
I made beets for the first time tonight after thinking that they were some magical hard to prepare veggie. DH and I have declared ourselves hooked and was wondering if anyone had some tried and true recipes with beets as the focus. Thanks in advance!

roast them, peel them and dice them. chop up some dill, dice some cucumber, mince some onion, add a moderate blob of sour cream, and a light splash of vinegar, S&P, and toss them in
