we had sundried tomato chicken rollovers ( a rachael ray recipe.
basically you mix a thing of sun dried tomatoes with a thing of ricotta cheese, dip chicken breasts in eggs then bread cumbs--- THEN you put a spoonful of the tomato and ricotta mixture on the chicken and roll the chicken up ( like you would for chicken cordon bleu)... then you bake it 
comes out REALLY good, and so easy!!
