Homemade caramel popcorn....

Omg, I made this tonight and it's freaking delicious! It was pretty easy, too!

15 cups plain popped popcorn
1/2 stick of butter
1/4 cup of light corn syrup
1 cup packed brown sugar
1/2 tsp. salk
1/2 tsp. baking soda

Heat oven to 200 degrees.
In a sauce pan, heat the butter, corn syrup, brown sugar and salt over medium-high heat, stir every now and then until bubbling around the edges. Once bubbling around the edges, let the mixture sit over the medium high heat without stirring for 5 minutes. After 5 minutes, remove from heat and add the baking soda and stir. It will become frothy and ligth. Then pour over the popcorn and coat it well. Spread on a large, ungreased cookie sheet and bake for 1 hour, stirring every 15 minutes. Let cool for 30 minutes and store in airtight container.

ABSOLUTELY delish!

Just buy plain popcorn kernels and put a few tablespoons in a paper lunch bag. Fold over the top and microwave for about 90 seconds (listen for the popping to slow).

Do you have Golden Syrup in Australia? Thats the best substitute that we have here.
