how many boxes of ziti???
im making baked ziti for about 20 people. its not a main couse. just part of a buffet. how many boxes should i make?? i was thinking 4.

1-1/2 boxes .... 2 boxes, max
That will fill up a long buffet tray which is plenty for a side dish.
I did it for Christmas. Made 3 boxes, it made more than 1 long tray, weighed about 25 lbs. Everyone had some and we barely made a dent in it (35 people as a side dish)
When you add the riccotta, mozzarella, sauce ... it created volume/density!

ETA: I just asked my dad - he was a chef when he served in the army and he said 1-1/2 boxes is plenty .. 2 boxes if you want a lot of leftovers.

thank you. i asked my dh last night and he tells me "i would figure about a 1/2 POUND of pasta per person, right". i looked at him like he lost his mind.
