Anyone have a good chicken curry recipe?
I tried the curry sauce at Trader Joe's.. added it to chicken but it was WAY too salty.
Anyone have a good recipe that isn't extremely spicy?

well, I love cooking indian food..... but it's not something you can just whip-up. it takes a degree of comittment to the cuisine becuase you have to buy soooo many different spices and learn so many techniques.
basically, many of the spices go in the pan FIRST, before any other food, which is why cooking meat and pouring sauce over it never tastes right....
here's a basic chicken dish (made up from my head, but simplified and modified for american cooking techniques) that you can try:
sautee 1 huge diced onion with 1/2 T whole cumin seeds until golden. puree in blender.
grab 1.5 lbs chicken tenderloins in the store (or cut up breast meat into bite-sized chunks). put in a bowl the pureed onions, 1 t ground corriander seed, cayenne to taste, and 1/4t ground cardamom, cloves, and cinnamon. add about a cup of greek WHOLE MILK (not low fat) yogurt. trust me, you can't sub in low fat here.... there's no substitute! stir and add the chicken. marinate on the counter at least 30 min. then heat a frying pan with a little oil and dump the whole contents in the pan. Cook until chicken is done, stirring occassionally. Salt to taste, and add chopped cilantro before serving. that's about as authentic of a curry you can get w/o too much spicy heat, no special cooking techniques, and grocery store spices....

I just made one of my favs two nights ago. Saute some red peppers and broccoli in coconut oil. Add in diced chicken cubes and sprinkle generously with curry powder. Stir until chicken is almost cooked. Then drown it all with honey; add more curry and bring to a boil, stiring constantly. Thrown some rice on your plate and top it off with your "Honey Curry Chicken & Broccoli". Mmmmmm....

What kind of curry do you want? I usually will make a Thai curry. I get Mae Ploy and add coconut milk to it.

You should be able to buy a jar of curry paste at the supermarket, you can fry that up with your onions, throw some chicken in, throw some stock in, and let it simmer for 30 minutes. Bobs yer uncle, you got yourself a chicken curry!
Indian food is great because its super easy, just buy yourself some cheats. Don't grind your own spices and all that jazz...
I made a Lamb & Mango Biryani for dinner this week and my husband was swooning at how delish it was!
