I know you said veggies but would you consider a fruit dish. I have a recipe for Peach Kugel that is so yummy!!!!!!

Sure. It is definitely not fat free but I promise you so yummy. It is also great for Passover.
Peach Kugel
1 pound matzoh farfel Boiling water 1 (16 ounces) can sliced peaches, undrained 7 large eggs 1 cup margarine, melted 1 cup sugar 2 tablespoons, vanilla extract or 2 packages vanilla sugar Sugar Ground Cinnamon
Preheat oven to 350.
Place farfel in colander. Pour boiling water over farfel; drain and put aside.
Drain peaches, reserving liquid.
Beat eggs in a large mixing bowl until well blended. Beat in margarine, sugar, vanilla, farfel and reserved peach liquid. Cut in several peach slices.
Pour into a greased 13x9 baking pan. Place peach slices on top, pressing down slighty into batter to prevent burning. Sprinkle with sugar and cinnamon.
Bake, uncovered, for 1 hour.

My sisters MIL cooks frozen veggies, drains them and then adds some Soy Vey Terayakki or the Soy Vey Island terayakki. Not too much just enough to taste. It is really yummy. HTH

i have a wonderful noodle kugel receipe if anyone wants it.
I was thinking of just some asparagus or carrots or brocolli.
DH is killing me with this veggie thing.
Sautee some asparagus and then bake it with some breadcrumb?
Steamed brocolli?
Honey carrots sound good.
