baked salmon ideas needed
I bought a nice piece of salmon and I wanna make it tonight for dinner. Any ideas?

I actually just made salmon last night.
Here is how we cook it:
Take your piece of salmon. Put it on a sheet of aluminum foil.
I cut up veggies and put them on top of the salmon. Usually string beans and orange pepper. You can really do whatever veggies you want.
Then I mix some lemon juice with EVOO and add some spices (dill and some Mrs. Dash.. again you could do whatever you want) and I put a few tbsp over the fish/veggies.
I wrap it up into a nice foil packet and bake in the oven at 400 degrees for 20 minutes.
i also cook some rice while that is baking and it comes out to be a very delicious, healthy meal!

My favorite salmon is also cooked in foil.
Put a tiny bit of EVOO on the foil, place salmon on top.
Add some chopped garlic, grape or cherry tomatoes, sliced black olives, salt & pepper and bake.
Yum!!

I do this too but, I also add a little bit of feta cheese.

Made this last night...it was very good!
Parmesan-Baked Salmon
1/4 cup KRAFT Real Mayo Mayonnaise 2 Tbsp. KRAFT Grated Parmesan Cheese 1/8 tsp. ground red pepper (cayenne) 4 salmon fillets (1 lb.), skin removed 2 tsp. lemon juice 10 RITZ Crackers, crushed (about 1/2 cup crumbs)
PREHEAT oven to 400°F. Mix mayo, cheese and pepper until well blended; set aside.
PLACE salmon on foil-lined shallow baking pan. Drizzle evenly with lemon juice. Top with cheese mixture; spread to evenly cover salmon. Sprinkle with cracker crumbs
BAKE 12 to 15 min. or until salmon flakes easily with fork.

Salmon
Honey and citrus juices flavor these tasty salmon fillets. Serve this salmon with rice or potatoes and fresh cooked green beans or peas. Ingredients: • 4 salmon fillets, about 6 ounces each, skin on • 4 tablespoons honey • 3 tablespoons fresh lime juice • 2 tablespoons orange juice • Sea salt and freshly ground black pepper Preparation: Grease a 9x13x2-inch baking pan. Heat oven to 400°. Place salmon, skin-side down, in the prepared baking pan. combine the honey, lime juice, and orange juice, stirring until well blended. Sprinkle the fillets with salt and pepper then spoon the honey and juice mixture over the fillets. Bake for 10 to 12 minutes, or until fish flakes easily with a fork. Serves 4.
