made this for DH last night and he loved it

Its almost like a bruschetta over chicken:


Chicken with fresh tomatoes

6 chicken cutlets thin to medium thickness
Dip in egg then bread crumbs
Bake in oven…10-20 minutes per side depending on the thickness


Chop of 6 medium size tomatoes into cube size pieces
(tomatoes on the vine is the best to use but you can use any kind)
Chop the tomatoes in some sort of dish that allows you to save the juice.
Chop 10 leaves of fresh basil very small
Chop one ball of fresh mozzarella into cubes
Throw tomatoes, basil and mozzarella into a big bowl
Add olive oil, about 1 teaspoon dried basil OR oregano and a lot of salt to season
Be generous with the salt….takes a lot of salt to season the tomatoes.
Stir together very well and serve on top of chicken cutlets.

Buy some Italian bread to dunk
