I haven't done low acrb but have you tried the pureed cauliflowerf? Its awesome-heres how you do it:

Steam cauliflower
puree in food processor
add salt and pepper
add a few wedges of laughing cow cheese-whatever type you like
I also add some parmesan

just taste it for amounts-I like stuff really flavorfull so I tend to add a lot

Another great one
Buy butternut squash-i usually get frozen
cook it according to directions
Add parmesan cheese and brown sugar to taste-sounds gross but its really good

My DH makes spaghetti squash with sausage-cook sauasge in a pan, sautee the spag squash in same pan with chik stock til tender-scoop sausage and spaghetti squash back into shell and liberally sprinkle parmesan on top. Bake at 350 for 20 mins

There is a great website called lowcarbfriends.com I believe Christine on here gave me the site a long time ago. They have a TON of recipes on there. I've made this broccoli casserole for T-day before and it's soooo good!


10 ounces frozen broccoli -- cooked, 10-15 ounces
1 cup mayonnaise
1 can cream of mushroom soup -- or cream of chicken
2 eggs
1 1/2 cups shredded cheddar cheese
mushrooms or bacon (optional)
How To Prepare: Preheat oven to 350 and grease 9x9 glass dish.
Beat eggs, soup, mayo and shredded cheddar in bowl until well mixed.
Add cooked broccoli (and mushrooms & bacon if you desire).
Pour mixture into glass dish and bake about 45 minutes or until top is browned.

Mel, I make spaghetti squash all the time, DH loves it!

I think I'm going to make baked cabbage and cheese and sweet potatoes

I'm tired and its easy...lol
