I need a dessert

for my friend's shower. We have to fill out a recipe card with a good dessert..so post away ladies...

Black-Bottom Chocolate Pie

Filling
2/3 cup sugar
1/4 cup cornstarch
2 tablespoons unsweetened cocoa powder
Pinch of salt
6 large egg yolks
2 cups low-fat (1%) milk
1/2 cup chilled whipping cream
6 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
1 tablespoon dark rum
1 teaspoon vanilla extract
Chocolate Crumb Crust (sold in most grocery stores or see following recipe ... )

Crust
1 9-ounce box chocolate wafer cookies, broken
2 ounces bittersweet (not unsweetened) or semisweet chocolate, coarsely chopped
5 tablespoons unsalted butter, melted


Topping
1 cup chilled whipping cream
2 tablespoons powdered sugar
1 teaspoon dark rum
Chocolate curls


For Filling: Whisk first 4 ingredients in heavy medium saucepan to blend. Whisk in egg yolks to form thick paste. Gradually whisk in milk, then cream. Whisk over medium-high heat until mixture thickens and boils 1 minute. Remove from heat. Add chocolate and whisk until smooth. Whisk in rum and vanilla. Cool 5 minutes, whisking occasionally. Transfer filling to frozen crust. Chill until cold, at least 2 hours and up to 1 day.

For Topping: Beat first 3 ingredients in large bowl until firm peaks form. Spoon whipped cream into pastry bag fitted with large star tip. Pipe rosettes around edge of pie. Garnish with chocolate curls. (Can be made 4 hours ahead; chill.)

I usually won't touch bread pudding, but this stuff is awesome! (I mean, you can't go wrong if it has Krispy Kremes in it!)

Recipe Summary
Difficulty: Easy
Prep Time: 10 minutes
Inactive Prep Time: 15 minutes
Cook Time: 1 hour
Yield: about 12 servings

2 dozen Krispy Kreme donuts
1 (14-ounce) can sweetened condensed milk (not evaporated)
2 (4.5-ounce) cans fruit cocktail (undrained)
2 eggs, beaten
1 (9-ounce) box raisins
1 pinch salt
1 or 2 teaspoons ground cinnamon
Butter Rum Sauce, recipe follows

Preheat oven to 350 degrees F.
Cube donuts into a large bowl. Pour other ingredients on top of donuts and let soak for a few minutes. Mix all ingredients together until donuts have soaked up the liquid as much as possible.

Bake for about 1 hour until center has jelled. Top with Butter Rum Sauce.


Butter Rum Sauce:
1 stick butter
1 pound box confectioners' sugar
Rum, to taste
Melt butter and slowly stir in confectioners' sugar. Add rum and heat until bubbly. Pour over each serving of Krispy Kreme Bread Pudding.

Mini peanut butter cup cookies---sooooo good!

COOKIES:
1 cup butter
3/4 cup brown sugar
1/2 cup granulated sugar
1/2 cup creamy peanut butter
1 egg
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
40-45 chocolate-covered miniature peanut butter cups

GLAZE:
1 teaspoon butter
1 cup semi-sweet chocolate chips
2 tablespoons creamy peanut butter

1. Preheat oven to 375 degrees.

2. For cookies: combine butter, brown sugar, granulated sugar and
peanut
butter in large bowl. Beat at medium speed of electric mixer until well
blended.
Beat in egg and vanilla.
3. Combine flour, baking soda and salt in small bowl. Mix into creamed
mixture at low speed until just blended.
4. Form rounded teaspoonfuls of dough around each peanut butter cup.
Enclose entirely. Place 2 inches apart on cookie sheet.
5. Bake 8 to 10 minutes or until cookies are just browned. Remove
immediately to wire rack.

6. For glaze: combine butter, chocolate chips and peanut butter in
microwave-safe cup. Microwave at 50% (medium). Stir after 1 minute.
Repeat until smooth.
(or melt on range top in small saucepan on very low heat.) Dip cookie
tops in glaze.

ONE OF MY FAVS

Cheescake topped brownies

1 21 1/2 oz fudge brownie mix ( i always use betty crocker fudgebrownies 13x9 family size red box)

1 8 oz package cream cheese softened
2 tbsp margerine or butter softened
1 tbsp corn starch
1 14 oz can eagel brand CONDENSED milk
(not evaporated milk)
1 egg
1 tsp vanilla extract
1 can chocolate frosting

preheat oven to 350 degrees. Prepare brownie mix as directed on box. Spread into well greased 13x9 baking pan. In a small bowl beat cream cheese, butter and cornstarch until fluffy. Gradually beat in sweetened condensed milk ,then the egg and the vanilla until smooth. Pour evenly over brownie batter. bake 30-35 minutes or until top is lightly browned. Let cool then frost with chocolate frosting

Blueberry Cobbler

Prep: 5 min, cook time: 1 hour

Preheat oven 350 degrees

Ingredients:
1 cup and 1/4 cup sugar
1 cup self rising flour
1 cup milk (any kind - whole, skim, soy, your choice)

1/2 cup butter, melted
2 cups frozen blueberries (about one bag)

Mix 1 cup sugar, flour and milk until just blended.
Add butter.
Pour mix into 9x12 greased pan.
Spread blueberries evenly and top with 1/4 cup sugar.

Bake for one hour or until brown and bubbling.
