Sprucing up canned vegetables

How do you make or what do you use to spruce up canned veggies? String beans and green beans are so boring straight from the canChat Icon

Tequila-Lime Corn:

INGREDIENTS
1/2 stick unsalted butter, softened to room temperature
2 cloves garlic, minced
Small handful fresh cilantro leaves, chopped fine or rolled & sliced into very thin strips
Juice and zest of 2 limes
1-2 tablespoons gold tequila
Cumin or chili powder to taste
Salt & freshly ground black pepper to taste

Cream the butter with a fork. Add the garlic, cilantro, lime zest and spices. Mix lime juice and tequila and trickle in a little at a time, whisking with a fork till it won't take any more liquid. Butter will be very soft.

Spoon onto a square of plastic wrap and roll in a sausage shape, twisting the plastic wrap at each end to seal. Refrigerate till firm, 1-2 hours. Slice and use some on canned corn. Any leftover butter can refridgerate for 4 days or freeze for longer.

that's what I do. I'll also add slivered almonds to stringbeans (you can usually find them in the produce section where the salad toppers are). I'll also sometimes add another vegetable, like string beans and shallots. DH doesn't really like veggies, but I try to make them interesting for him.

i sautee some chopped onions in olive oil and mix it in with a can of peas...and a little salt & pepper..its good!

Peas with Mushrooms, Onions and Pignoli Nuts

1 Can of Peas, drained
1 Medium Onion, sliced thin
1/2 container Button, Shitake or Baby Bella Mushrooms, sliced thin
1 Handful of Pignoli (pine) Nuts
Olive Oil

Heat 1 Tsb Olive Oil in small frying pan and gently toast pignoli nuts. Remove from heat and set aside.
Heat 2 Tbs Olive Oil in Sautee Pan and add Mushrooms and Onions. Cook until brown.
Add drained can of Peas and Pignoli Nuts and stir until heated through.

I always add ( I hate canned but to frozen veggies) garlic, butter, some oil. Different dried seasonings...some nuts...Cheese sauces, some shredded parm cheese

Sometimes I use a little salad dressing over them for some flavor. DH likes to sprinkle a little parmesean cheese on his.

Just to let you know, my friend turned me on to frozen veggies. So much better then canned veggies!!!!! Just a thought. I use chopped garlic, light butter and salt and pepper.

yeah frozen veggies are better for you too- taste fresher, etc.
i prefer frozen spinach & stringbeans.

Saute your string beans with garlic and EVOO and then add some pre-sliced almonds. Yum!!
