Book Club Meet Up!

Hi Ladies!

I'm so excited to meet you all tonight (except you Jess 'cause I already did)

If I am correct we are doing 7:45 - 8:00? Since I figure everyone will have eaten by then I'm doing cheese, fruit and dessert. Probably mini-cheesecakes, mini-brownies (for everyone watching their weight) some cookies. I'll have coffee, tea, wine and soda.

Please let me know if you want/need anything else. Also, if you need either my address again or specific directions.

Sounds good to me. I spoke with Marisa (Risileigh) about carpooling also. Maybe we can meet and pick you up on the way down? (I am in Mt. Sinai, she is in Centereach, I believe)

Sounds good to me. I spoke with Marisa (Risileigh) about carpooling also. Maybe we can meet and pick you up on the way down? (I am in Mt. Sinai, she is in Centereach, I believe)




Or I can swing by you and then we can go to Marisa's!

Hi ladies, it was really nice to meet you all last night. Since we're all old and married and have nothing better to do than post recipes, here is the edamame dip recipe:

Edamame Dip
Coarse salt and ground pepper
2 cups frozen shelled edamame (fresh, shelled edamame works well too)
3 large garlic cloves, peeled
1 tsp grated lemon zest
1 to 2 tbsp fresh lemon juice
1 tsp olive oil

In a medium saucepan of boiling salted water, cook the edamame and garlic until beans are tender, about 5 minutes. Drain. In a food processor, purée edamame, garlic, lemon zest and juice, oil, and 1/2 cup water until very smooth, about 2 minutes, scraping down sides of bowl. If needed, thin by adding water one tablespoon at a time. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Refrigerate for at least 30 minutes or up to 1 day. (If needed, add additional water.)

*the only thing I did differently was add red pepper flakes and a tbsp of sour cream
