this is a tough one.
knitters have very specific tastes.
i do like the idea of expensive yarn she wouldn't buy for herself... but then you have to think of what project she would make and is it enough.
i say, try to find out her favorite yarn shop and get her a gift card to that place. i know it's not very personal, but she'll have fun touching all the yarns as she shops... mmmm yummy yarn.
just for the sake of the discussion... if it was me: i would love the following
* cashmere yarn
* baby alpaca yarn
* hiya hiya circular needles, any size
* knitting for two (pattern book)
* knitting lingerie style (pattern book)

I agree....a gift card or gift certificate would probably be best.
Cashmere yarn...  I'm thinking I need to make myself something.....

I vote for gift certificate too. Knitters really have specific taste and she'll love being able to go to a shop and have fun. My aunt gave me a GC once and it was one of my favorite gifts ever.
Also, for example, I am a project knitter and I really need to be the one to purchase the yarn. I also generally require 15 skeins (at least) of yarn in the same color and dyelot so a lot of the time the owner has to special order it for me.
You can also try the Village Knitter in Babylon Village. link I've shopped there and it's a cute store.
