Ok--I know it is not summer yet but I am having a luau themed BBQ in July and am trying to come up with ideas for a menu to go with the theme. It is going to be a lot of people (40-50) so nothing too complicated!!!

My DH thinks I am crazy for thinking of thsi so early but I am a planner!!Chat Icon

Skewers of Shrimp and Chicken marinated in a Teryiaki Pineapple glaze
Marinated Flank Steak
Roast Pig (you can by one)

Some recipes:

Huli Huli Chicken
INGREDIENTS:
5 lbs chicken pieces
1/3 cup ketchup
1/3 cup soy sauce
1/2 cup brown sugar
3 tablespoons sherry
1 piece ginger root, crushed
1 clove garlic, crushed
PREPARATION:

Arrange chicken, skin side up, on rack of broiler pan. Broil 6 to 8 inches from unit in electric oven for 10 minutes on each side or cook on an outdoor grill. Combine the remaining ingredients. Baste the chicken and continue broiling or grilling for 10 more minutes on each side, basting frequently with sauce.


Chicken Luau

INGREDIENTS:
1 chicken cut into pieces
1 tablespoon vegetable oil
1 teaspoon salt
water as needed
3 pounds taro leaves (or fresh spinach)
2 tablespoons butter or margarine
salt
1 can coconut milk

PREPARATION:
In a large pot, add vegetable oil and heat. Add the chicken pieces and brown lightly, turning frequently. Add enough water to cover the chicken. Simmer for about 30 minutes. Pour out the liquid.
If spinach is used instead of taro leaves, rinse the spinach thoroughly in water.

Drain the water from the spinach.
Heat 2 tablespoons butter or margarine in the pot. Add the drained chicken. Season with salt to taste and simmer. Add spinach (or 1-2 lbs. of taro leaves), as well as 1 cup coconut milk to chicken. Simmer for 5-10 minutes and serve.



Aloha Sweet Potatoes
4 to 5 medium sweet potatoes
1/2 cup butter
1 cup brown sugar
1/2 cup water
1/4 cup shredded coconut
Boil sweet potatoes in their jackets until tender, about 25 minutes. Let cool, then peel and cut into
slices 1 1/2-inch thick. In a large skillet melt butter. Stir in brown sugar and water and cook on medium heat about 5 minutes. Reduce heat and add sweet potatoes to skillet. Cook gently; tossing lightly until sweet potatoes are glazed. Sprinkle with coconut before serving. Makes 8 servings.

Note: Canned yams can be used in place of sweet potatoes.


Oven Kalua Pork
4 to 5 pound pork butt
1 tablespoon liquid smoke
2 1/2 tablespoons Hawaiian salt
Preheat oven to 325 degrees F. Rub pork with liquid smoke and 1 1/2 tablespoons of the Hawaiian salt. Wrap pork in foil and seal completely. Place pork in roasting pan and bake for 5 hours. After baking, shred pork, sprinkle with the remaining Hawaiian salt. Makes 10 servings.


Chicken Long Rice
1 bundle (1 3/4 oz.) bean threads (long rice)
2 pounds chicken (breasts or thighs)
2 tablespoons macadamia nut oil
2 cloves garlic, minced
6 cups chicken stock
1 teaspoon minced ginger
1/4 cup soy sauce
1 can (10 oz.) whole mushrooms, drained or 8 dried shiitake mushrooms*
1 tablespoon thinly sliced green onions
Soak long rice in warm water for 30 minutes; drain and cut into 2 inch lengths. Remove skin and bones from chicken; reserve for stock if desired. Cut chicken into 1-inch cubes. Heat oil in a large skillet and saute chicken and garlic until light brown. Add stock, ginger, soy sauce, mushrooms and long rice. Simmer, covered, for 15 to 20 minutes or until chicken is tender. Sprinkle with green onions just before serving. Makes 8 servings.

*soak shiitake mushrooms in warm water for 15 to 30 minutes, then remove stem and cut into quarters



Pineapple Calabash Punch
1 fresh pineapple
2 tablespoons sugar
1/2 cup brandy
3 cups pineapple juice
2 bottles (750 ml each) Chablis, chilled
1 bottle (750 ml) champagne, chilled
Remove rind and core from pineapple; cube fruit. Sprinkle pineapple with sugar and add brandy. Refrigerate 6 hours or overnight. Pour pineapple juice into a ring mold and freeze. Add wine to pineapple brandy mixture about 30 minutes before serving. Add champagne and ice ring just before serving. Makes 20 (4 oz.) servings.



MACADAMIA NUT CRUSTED COCONUT SHRIMP
1/4 cup all-purpose flour 1 pound cleaned and deveined shrimp
1/2 cup coconut milk
1/4 cup crushed macadamia nuts
Preheat oven to 400 degrees Fahrenheit. Lightly coat a baking dish with olive oil. Place flour in a small bowl. Dredge shrimp in flour, then dip into coconut milk and roll in crushed macadamia nuts. Place in baking dish and bake for 10 to 15 minutes, or until shrimp is cooked through. Serve 3 shrimp on a bed of rice topped with orange lime sauce. Makes 4 servings


SESAME CABBAGE SALAD
1 head cabbage chopped
1 bunch green onions chopped
1/2 cup chopped celery or peppers
3 packages Ramen chicken soup (dry soup pks)
1 bag frozen peas
1/2 cup vegetable oil
1/4 cup cider vinegar
2 Tablespoon sugar
8oz chunk almonds, toasted
4 Tablespoons sesame seeds, toasted
Mix cabbage, green onions, and celery. Break up dry Ramen noodles and toss in. Mix dressing of vinegar, oil, and soup mix. Toss dressing and toasted almonds and sesame seeds with salad mix. This yields a lot of salad and is best served same day. Serves 15-20 people.



HAUPIA (coconut pudding desert)
12 ounces chilled coconut milk
1 1/2 cups water
1/2 cup + 2 T. sugar
1/2 cup + 2 T. cornstarch
Combine all ingredients in saucepan and stir over medium heat until thickened. Lower heat and cook for ten minutes, stirring constantly to avoid lumping or burning. Pout into 8x8 inch dish and chill until set. Cut haupia into squares & serve. Serves 8-10 people.



HAWAIIAN AMBROSIA
8 ounce can of crushed pineapple, drained
1 can lychee pitted and drained or 11 ounce can mandarin oranges drained
3 ½ cups cool whip
2 cups shredded coconut
2 cups mini marshmallows
½ cup milk
1 cup maraschino cherries
In a large bowl pineapple, lychee or mandarin oranges, whipped topping, coconut, marshmallows and milk. Chill 1 hour. Garnish with cherries before serving. Serves 12.

We have one every year--This year will be our 4th. We also make it a BBQ. My DH marinates the chicken in a pineapple/teriyaki type dressing. It comes out delicious. We try not to make the menu too crazy w/ Hawaiian only because everyone doesnt like certain types of tastes. We try and keep it somewhat simple. Sausage, marinated london broil, hamburgers, hot dogs, etc. But we have tons of fruit/fruit salads, vegetable/pasta salads, etc. Sometimes we'll even get a 6 ft. hero to add to all of it. That usually gets eaten later at night---LOL

I go crazy on the different types of alcoholic drinks. I pretty much have every flavor available for margaritas, daquiries and Martinis!

And then we decorate it nice..........we have tall palm trees that light up along w/ so much Luau decoration from every year we just keep adding to our collectection every time we see something. LOL

Have a GREAT time!! I'm sure after this one, you will have one every year!

We must be related, I am the EXACT same way. We did a Luau last year for our bbq, it was alot of fun and easy to find cute stuff.

Thanks everybody!!! I have been looking at decorations and reciped on line and I can see how this could be addicting! They have such cute decorations. At Party City yesterday they had this cut out with a surfer/girl in bikini thing that was so cute--you know the ones that you people put their faces in to take pics. I think i am gonna get it.

We don't want to go crazy with the theme-we have a BBQ every year and this is the 1st year I am going with a theme--so my DH thinks i am totally crazy but I am having fun with it already! Thanks again!!!

I had a hawaiian themed party (it was indoors) and I made some regular stuff for the nonadventurous types (pasta, sausage and peppers and stuff like that). For A Hawaiian feel - I made Hawaiian chicken, coconut rice, and honey/pineapple glazed ham. I made an ambrosia for dessert (not really hawaiian but had coconut and pineapple in it so figured it worked with the theme).

The Ham I got at a store, easy to slice type and only had to bake.

I'll see if I have the other recipes.

I didn't make this but have this stored at home
Hawaiian Burgers

The flavors of pineapple and teriyaki sauce combine to add new dimensions to burgers.

Serves 4

1 pound Ground chuck
4 Pineapple slices, in juice
1/2 cup Teriyaki sauce
4 Cooked bacon strips
4 Buns

Mix together 3 Tablespoons of pineapple juice with the teriyaki sauce. Form the beef into 4 patties. Marinate them in the mixture for 5 minutes. Grill the burgers and pineapple slices. Top the beef and pineapple with the bacon. Serve warm.

Division Ave Caterers does this. My DH would love to do it. I want to look into it as well, as long as we don't have to dig a pit in our backyard.

So far I got one price for the roast pig and it is $250 just for the pig--it comes cooked and ready to go. And it is $550 to have them come and set up a BBQ pit and cook it at the house. So I am not sure we are going to do that.

I think I am going to make
-sweet and sour chicken with rice
-luau sweet potato
-shrimp kebobs

and probably burgers and hotdogs and maybe sausage and peppers. For dessert I am making ambrosia, pineapple upside down cake and getting a tub of pina colada italian ices. I also think i am going to make a big punch bowl of mai tai's.

Any other suggestions?
