What would you cook for
A couple coming over to your house for dinner....more of a work/colleague friend but you don't know them well. They said they pretty much eat anything.
I could do my old standby Chicken Parmigiana, but that can get boring....but I don't want to do anything too crazy...
Ideas?

I usually stick to chicken and italian food for work-related or someone who we don't entertain for a lot. I think Chicken Parm sounds great... it won't be "the usual" for them because they never eat at your house. I like to pick a basic meal like that, that I assume they will like and I make well, and then add a lot of sides like garlic bread, spaghetti, chopped salad, cooked string beans or broccoli, etc.

pork loin or lasagne. I figure those usually make everyone happy.
I'd also make a salad and have rolls. if i did the pork, I'd do a potato with it as well as some sort of veggie.

Chicken or veal parm is always a good standby. But I'd also play around with ham, roast beef, or maybe a london broil.
Or if you want to be fun, do taco night

parm crusted chicken rollatini served with pasta with vodka sauce, garlic bread and salad... easy and always a hit!
marinated skirt steaks (or flank steak) on the BBQ with some kind of potato (twice bake, au gratin, mashed)
crab stuffed shrimp with potatoes and a asaparagus
crab cakes with pasta and pesto sauce and a veggie

I invited another couple over and we had a taco night w/sangria!! It was great and they LOVED it.
The best part, all I had to cook was the ground beef. I layed everything out on the table :tomatoes, shredded cheese, sour cream, salsa, etc. and the tacos (soft and hard shell) then everyone did their own taco they way they liked it.
I also made a bean/chesse dip served w/tortiilla chips.

I like to make Linguini with fresh clams, in a white clam sauce. It's super easy and soooo good!

you could do chicken parm and meatballs, spaghetti. i've made chicken marsala for company, it easy.
