I use the recipe on the back of the Baker's Shredded Coconut bag and they come out delicious! I also melt chocolate, put it in a ziploc bag, snip one of the corners and drizzle chocolate on them.

I have the best recipe EVER for macaroons from my friend Mandy!
So simple to make and SUPER delicious! Better than any other I've ever made (and I've been making macaroons for years and years). I just made them today to put inside the crispy easter baskets I posted (they're rice krispie treat baskets with a coconut macaroon and 3 peanut m&ms to look like eggs).
Anyway, here is the recipe:
Mandy's Macaroons:
ingredients: 4 large egg whites 1 1/2 teaspoons vanilla 2/3 cup sugar (or a little less) 1/4 cup all-purpose flour 3 1/2 cups lightly packed sweetened flaked dried coconut
Prep: 1. In a bowl with an electric mixer on high speed, beat egg whites until whipped - like frothy marshmallow
2. Beat in vanilla, sugar, and flour until well blended. Stir in coconut.
3. Either drop by teaspoon or pipe in piping bag with LARGE round tip (to avoid clogging) onto parchment paper lined sheets to make little peaks with the batter - Bake in 325 oven until macaroons are golden, about 20 minutes. If baking more than one pan at a time, switch pan positions halfway through baking. With a wide spatula, or with fingers carefully, peel macaroons off paper and set on racks to cool completely.
You can easily halve the recipe and it makes a dozen, halved.

I have a great Alton Brown from Food Network one, and it is Kosher for Passover since it doesn't contain flour.
1 (14-16 oz.) package of shredded coconut 3 tablespoons sweetened condensed milk pinch of kosher salt 2 teaspoons vanilla extract 4 large egg whites 10 tablespoons of granulated sugar optional: chocolate
325 Oven
Combine coconut, sweetened condensed milk and salt.
beat the egg whites until foamy and then add sugar (slowly) to egg whites and beat until medium peaks form.
Fold the egg-sugar mixture into the coconut mixture. Scoop a table-sized mound onto a baking sheet and fill it.
Cook 20-25 minutes of until it gets golden on the sides.
Optional: Melt the chocolate and dip the macaroons in it.
