Escarole?

I just went to the Farmer's Market near me and bought fresh escarole - why, I don't know - but now what can I do with it? Is it just used for salad?

Wash it really good (like spinach) because it is very sandy.

Then I do one of 2 things with it ...


Sautee it with Garlic & Olive Oil (like spinach). You can add Cannellini beans to make as italians say "scarole & beans"

Or you can make Escarole Soup ... In a stock pot/dutch oven... pan fry some chopped panchetta, diced onions and garlic in olive oil. Add Chicken Broth to Stock Pot. Add Escarole and Cavatelli (or tortolini). Serve with Garlic Bread.
