Chicken Breasts and Ground Beef....

I buy mostly these two types of meat, with other things occasionally. Both you can do a lot with....but I'm getting bored with it all....

What are your favorite, non-typical things that you make with each of these types of meat?

I make chicken terriyaki nuggets with chicken breasts -

-put a little olive oil in the bottom of a pan (I usually use the aluminum ones)
-cut up the chicken into bite-sized pieces
-bread the chicken (I just use water - not egg)

Bake the chicken, uncovered at 450 degrees for 15-20 minutes (until chicken is cooked)

Take chicken out of the oven, pour in some baste and glaze terriyaki sauce (made by kikkoman) and mix with chicken until the chicken is basically just covered - don't drench them in the sauce.

Cover the pan up with aluminum foil and put back in the oven at 250 degrees for another 10-15 minutes, and its done!

I don't have exact measurements for anything, but its really easy to make and DH's favorite meal!

Chicken Breast:
Grilled - any type of maridnade will do - homemade or bottled;
Stuffed- anything really, sometimes asparagus & mozzarella, sometimes mushroom, spinach, breadcrumb, & parmegan
Cut Up - and Sauteed with Veggies
Strips - fajita's or oriental grill with veggies on wraps

Ground Beef: Taco's, Chili, Picadillo, fajita burgers

With ground beef I usually make taco salad (a fave here), meatloaf stuffed with spinach, or seasoned burgers

Chicken breasts- I marinate them in EVOO, basil, garlic, sometimes some lemon and grill. Or, cut them up and make fajitas or a stir fry.

Chicken roll ups are another fave...marinate chicken in italian dressing or, whatever you prefer...coat with bread crumbs and then top with whatever you want (we usually use combos of spinach, red pepper, cheese, salsa, onion, etc...) and roll up. Bake at 350 for about an hour (we like everything well done). This recipe is easily tweaked.

I take ground beef...add a little bread crumbs and some egg substitute...just a little...then i add some parsley, Montreal steak seasoning, Worschire (sp?) sauce and a dash of hot sauce. mix together and form into patties..what ever size you want.

In a deep fryer, I cook some onions in butter, then in the same pan add the patties, and when they are almost cooked I add brown gravy and canned sliced mushrooms and let it all cook until the meat is cook all the way thorough.

Serve over rice or noodles.

Let me just post the things I do with chicken and ground beef....maybe I can give you guys some ideas or you'll see what I already do!

Chicken:
-chicken cutlets, of course.
-marinate overnight in JD BBQ sauce and grill
-cut up and do chicken stir fry with veggies
-parmasean chicken recipe from this board
-sprinkle with some chipolte seasoning, cook in salsa and serve with rice & beans
-marinade in teryiaki and grill
-grill and make homemade pizzas with chicken & artichoke hearts
-roll up with prosuito, use piece of linguini to hold together instead of a toothpick, brown and then cook in a pot of tomatoe sauce for a chicken rollup isntead of meatballs

Ground Beef:
-meatballs
-meat sauce
-meatloaf (i use the lipton beefy onion soup recipe! YUM!)
- homemade burgers - I put worsteshire sauce, chopped garlic, salt & pepper in them, or sometimes stuff with swiss & ham, and sometimes I use Mrs. Dash Garlic & Herb in them for seasoning also.

For ground beef i make something called Beef Mexicana-- Basically you brown up an onion in a big skillet, then you add the beef breaking it up into small chunks. once hte meat is cooked you add in a can of corn, a small can of tomato sauce, then fill the tomatoe sauce can with water and add that in as well. Let it cook for another 10 minutes or so just to blend all the flavors together and serve over orzo or rice. Sometimes we put mexican cheese on top.

Another thing i make with ground beef is spinach and meat patties.
you pretty much make this the same way you would make meat balls but you add in a pack of thawed out drained frozen spinach. Roll it into meatballs and squish them into little patties (small hamburgers) then you can either fry them in EVOO or just bake them in the oven.

I will let you know if i think of anything else.

turkey burgers
turkey meatloaf
turkey meat balls



chicken dipped in breadcrumbs then feta cheese inside. secure with a toothpick and back at 350 for 20-23 minutes

chicken on the bbq with EVOO fresh sea salt and fresh ground pepper sliced over ceasar salad

chicken breasts: I marinate in different salad dressings and grill...we also discovered Lawry's Red pepper and lemon marinade YUM!

When I have left over chicken, I cut it up and save or freeze and make chicken fried rice.

Chicken marsala, chicken francese, or chicken caccitore (I make it with cutlets and not on the bone.)

I do stuffed chicken breasts w/ stuffing and bake in oven with a can of cream of chicken soup poured over it. I posted it on the recipe thread someone started on NFR the other week.

Ground beef: I bet your DH would like picadillo....a latin dish with ground beef, potatoes, peppers, onions, olives, and a tomato base sauce and served with rice.
