Cooking two dinners.
I really want to eat healthier dinners. Breakfast, lunch and snacks are no problem for me. My issue with dinner is I cook for myself and DH. DH is a very picky eater (he doesn't eat most vegetables, beans, potatoes) so I have always been limited as to what I could make for us (as I try to eat as healthy as possible).
Does anyone cook two dinners? I don't want to spend 2 hours preparing dinner but I want to cook healthier options for myself, while making something DH enjoys. Any ideas how this is possible?

I agree with Beth .. make the same protein and just have different sides. I keep very quick side dishes on hand like 90 second brown rice in microwave (so good) .. also frozen broccoli florets are super easy and really delicious. For Brian you can make a side like biscuits and a different kind of rice (Lipton had great rice packages that are ready in like 7 minutes)

I make the same protein and vegetable for the two of us, but then I make a starch for DH that I don't have. I make rice or something that lasts for several days, so I just have to heat up leftovers.
What veggies does he like? You could make a casserole using veggies he likes, and have that for a few days for him, and then just make a separate vegetable for yourself each day.

Some times I cook two dinners, DH is a meat and potato guy and I like to eat healthier things he doesn't like.
I would throw a ham steak or sausauge under the broiler for an easy meat for him w/ whatever veggies I'm having. If I know he wouldn't like what I'm having. Pasta w some veg sneaked in are easy too. I'm feeling alittle guilty that his meals are fatty now!

I'm trying to figure this out...it's hard because he is so picky! Beth he really doesn't like many veggies (pretty much peppers, onions, corn...thats about it lol). We seem to always have brown rice too!!

Theres lots you can do with corn (not healthy though) .. look up Paula Deans corn casserole. AMAZING!

Can you cook some large him-only meals on the weekend that you can freeze or at least use for dinners throughout the week and then just cook for yourself each day or vice-versa? That way it is not 2 meals every night but rather an extra meal or 2 on the weekends that help flesh out meals during the week?

Can you cook some large him-only meals on the weekend that you can freeze or at least use for dinners throughout the week and then just cook for yourself each day or vice-versa? That way it is not 2 meals every night but rather an extra meal or 2 on the weekends that help flesh out meals during the week?
Luckily, my DH will eat anything since I am not short order cook!

I'm liking this idea! On that note...I'm off to find new recipes to try! Maybe I can find some good make ahead and freeze meals.

I will sometimes make DH additional (or different) sides especially now that I am on a wheat free diet BUT I refuse to prepare him food that is unhealthy. Occassionally I will make a high calorie high fat meal but it is rare. I want my DH to be happy but most importantly I want him to be healthy!
