I always buy bananas and love to eat them when they are 1/2 yellow & 1/2 green.

Once they are really ripe I end up throwing them away.

Anyone have a banana bread recipe? At least they wouldn't go to waste---

Re: anyone have a good & easy recipe for banana bread?

I have the easiest recipe in the world:

Banana Nut Bread

INGREDIENTS

2 packages (8-1/2 ounces each) corn bread/muffin mix

1 cup mashed ripe bananas (about 2 medium)

1 cup chopped walnuts

1 cup milk

In a bowl, combine all ingredients just until blended. Spoon into two greased 8-in. x 4-in. x 2-in. loaf pans. Bake at 350° for 35-40 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. Yield: 2 loaves, 32 servings, 16 slices per loaf, 1 slice per serving.

* I usually add chocolate chips too.

Re: anyone have a good & easy recipe for banana bread?

Sorry this has taken me so long to type up. It was a busy weekend!

This is the recipe for my Banana Bread -- which a lot of people RAVE about!

3/4 c. sugar
1 1/2 c. mashed bananas (3 large)
2 eggs
2 cups all purpose flour
1/2 cup chopped walnuts (optional)
1 teasponn baking soda
2 teaspoons vanilla
1/2 teaspoon baking powder
1/8 teaspoon salt.

heat oven to 325

grease a loaf pan with shortening or margarine (i spray with pam)

mix all ingredients in a large bowl. start with dry and add oil, bananas, eggs, vanilla and walnuts.

bake for 70-80 minutes. test with a cake tester or wooden pick in the center of bread. let cool for at least 10 minutes before serving.

makes one loaf.
